A Yemeni Tradition, Four Spices
"Yam" is an ancient name for Yemen. This coffee carries that name because it comes from Yemen's highland farms - lightly roasted Arabica beans blended with cardamom, saffron, ginger and cloves in the tradition of Najran-style qahwa. Qahwa is Arabic coffee: spiced, simmered slowly and served in small cups without milk or sugar. It has been prepared this way across Yemen and the Arabian Peninsula for centuries. This is that tradition, made for your kitchen.
Floral, Warm and Gently Spiced
The light roast keeps the coffee character delicate - floral and slightly sweet rather than bitter or heavy. Cardamom leads the aroma. Saffron gives a warm golden colour and a faint sweetness. Ginger adds clean brightness. Cloves give quiet depth. Together they produce something closer to a spiced herbal infusion than a conventional coffee - smooth, aromatic and easy to drink at any point in the day.
How to Brew Yam Gold
One heaped tsp per cup in a dallah or small saucepan. Add cold water and bring slowly to just below the boil. Simmer 3-4 minutes. Strain through a fine sieve into small cups. Do not add milk - the spices carry the flavour on their own. Traditionally served alongside Medjool dates.
