From Yemen's Highest Coffee Gardens
The Haraaz mountains in western Yemen sit above 2,400 metres - high enough that coffee cherries develop slowly, concentrating sugars over a longer growing season than most of the world's coffee-producing regions. Royal Haraaz is grown at 2,450 metres, from the Ja'adi varietal: a prized Yemeni heirloom with genetics that predate the commercial coffee trade by centuries. Cherries are sun-dried whole on rooftop beds - no pulping, no tanks. The fruit's sweetness transfers directly into the cup.
What to Expect in the Cup
Royal Haraaz opens with jasmine - a clean floral note that carries into the first sip. As the cup cools, sweet ripe berry flavours come forward, balanced by a bright lemon zest acidity that keeps the cup lively without being sharp. A honeyed sweetness in the finish rounds everything out. This is a nuanced coffee best expressed through filter brewing at the correct temperature.

Pour-over / V60 / Filter: Grind medium-fine (pre-ground) · Water 90–96°C · Ratio 1:15–1:17 · Brew time 3–4 min
AeroPress: Grind medium-fine · Water 80–90°C · Ratio 1:15–1:17 · Brew time 1–2 min
Use filtered water where possible - the floral and fruit notes are sensitive to water quality.
